  1. 2 mugs diced carrots, (medium sized mug)
  2. 1 mug diced neeps,
  3. 4 large tatties, cut into peerie chunks
  4. 1 medium sized onion, chopped
  5. 2 chicken stock cubes
  6. 1.5 pints water salted to taste (about 1/4 teaspoon)
  7.  
  8. Put 2 tablespoons of sunflower or vegetable oil in a saucepan (large pan)
  9. Add chopped onion, cook for ~5 mins, stirring often
  10. Add carrots, neeps and tatties
  11. Sprinkle on 2 tablespoons of water
  12. Put lid on pan and saute vegs for ~10 mins, stirring right up from the bottom a few times
  13. Add 1.5 pints of water the 2 stock cubes and salt, then replace lid
  14. Bring to boil, reduce heat, simmer gently for 1 hour or so
  15. Check and taste! Vegetables should be soft
  16. When cooked, cool slightly then give it a good mashing with a tattie masher
  17.  
  18. Try dunking buttered bread in it, so good.

  20. It also freezes well.
