If however you look at it in that you look like Applejack, have a very similar personality to Applejack, have similar work ethics and have the same name as her, that I think is not discouraged

Being an Applejack-like character is admirable. She is strong, has great work ethic, is beautiful, honest, loves her friends. There is nothing wrong with that at all.

If it just makes you sad that you will never physically occupy a horse body, that would be when we would discourage such behavior. We really just want everyone to be happy in whatever way it takes.
