You’ll need water, ~1.5 ounces of yeast and the same amount of mash and sugar. The mash is what differs between the alcohols and is what gives it the base flavor.   As for knowledge I’ve been taught when I was 16 and have brewed my own on rare occasions [holidays/special gifts], but as seeing as I’ll have to put points into slss to be able to do this it shouldn't matter at all.   From here on out I’ll be using my moonshine experience for simplicity sake. Using 10 pounds of cornmeal as the mash, add that to the boiling water and stir until it becomes a paste, it’s easier to have too little water than too much so be careful. Add in the sugar and yeast and stir well until it’s fully mixed. [Almost any yeast can be used for this process, and yes sourdough can]   From here pour the mix into a clean pot and place cheesecloth or something similar over the top and keep in a cellar. Wait for the yeast to stop fermenting and then you can move onto the filtering.   Pour the mash over cheese cloth into a new clean bucket, then once you’re sure all the liquid has drained into the bucket discard the solid and pour the liquid into the still. Now this is the most important part of the process, you must make sure the temp stays at 80C anything below that is toxic and will blind you.   The end product should be ~2 gallons of moonshine with a proof of 180-190 near pure alcohol.
