Title: Lava Cake mix Author: Anonymous Pastebin link: http://pastebin.com/LDMvYeN6 First Edit: Tuesday 14th of February 2017 07:18:23 PM CDT Last Edit: Tuesday 14th of February 2017 07:18:23 PM CDT *** equipment *** small saucepan large mixing bowl whisk ramekins (the more the better - the mix thickens pretty quickly, but you can get two 2c ramekins in the oven twice each before it gets very thick)   *** ingredients *** 2 sticks unsalted butter, plus extra for greasing ramekins (~1/2 tbsp per ramekin) 4 tsp granulated sugar 1/2 tsp ground cinnamon pinch of cayenne or chili pepper powder pinch of nutmeg 12oz semisweet chocolate, chopped or morsels 1c all purpose flour 2 1/2 c confectioner's sugar (you fucking read that right, prepare your insulin shot) 6 large eggs 6 large egg yolks 1 1/2 tsp vanilla extract 1/4 tsp almond extract   Makes about 5-6 cups worth of mix   *** directions *** preheat oven to 400F   butter the ramekins with 1/2 tbsp butter each, the sprinkle with the granulated sugar   melt the  2 sticks of butter in the saucepan over very low heat, then add the cinnamon, pepper, nutmeg, and chocolate   stir the chocolate constantly until it's melted through and smooth, then take it off the heat in the mixing bowl, add the confectioner sugar, flour, vanilla, almond extract, eggs, and egg whites and whisk them until creamy   add the slightly cooled chocolate to the mix and continue whisking until thoroughly mixed   add the mix to the ramekins, filling halfway (fill too much and it'll take longer for the middle to bake right and the top will cook through)   put the ramekins in the oven for about 12 to 15 minutes, until the top becomes stiff, pulls away from the ramekin edges,and darkens a little, then pull out and let cool for ~5 minutes   run a thin knife around the edges of the ramekins, then place a plate face down over the ramekins and flip them upside down - they should fall right out. alternatively, they may break a little bit - butter the bottoms of the ramekins a little more and let them cook a teeny bit longer next time   dust with confectioner sugar, and add chocolate syrup, whipped cream, raspberries, whatever
