pears just get softer and juicier no matter how ripe they are.(within reason) Apples are best when they are crisp and juicy, but they have to be in that "ripe, but not too ripe" range for them to taste good.
It'll still depend on which type of apple and pear that you're comparing though. |

Also ripeness, since a pear can start out woody and soften. |
