The problem with this statement is that you're suffering from confirmation bias. You're not looking at the % of white ponies and blue eyed ponies in general. White is one of the most common hair colors, and blue (next to purple) is one of the most common eye colors. Especially in Canterlot, where a large number of ponies have white/grey color schemes.
