Because it's obviously not a stylistic choice by the character designer to make her look unique.

Your also assuming a unicorn with enough magic can't transmute herself into an alicorn form.
For all we know Star Swirl the Bearded was the greatest unicorn ever and invented the butterfly wing spell as a prototype and eventually mastered the alicorn transformation in his old age and blessed the two baby princesses with all his magic and the two forms. |

The basis for your theory seems to be that the princess in the book seems to switch from Unicorn to Alicorn, but in fact if you take another look you will notice it's a switch from Earth Pony to Alicorn.
It would have been a more likely theory if you had simply pointed out the Cadence's wings instead of confusing it with contradictory evidence. |

The most likely case is that in the middle of production of the episodes, Cadence was changed to a winged-unicorn, so she had to be changed in the book as well to met continuity.
Since Faust herself said that Cadence wasn't original a winged-unicorn when working on the episodes. (Remember guys, the finale is being written by the SAME person who wrote the "Hearts and Hooves Day" Episode. There are going to be obvious connections to this book and it's story and princess Cadence, why else would McCarthy introduce it?) The first appearance of the book was just an oversight by the animators. |
