I don't go for chain store pizzas, they use sauce that's made who knows where. I check for three things when selecting a pizza place.
First is the oven - Best is a stone or brick oven - that keeps the crust baking at an even temperature as the toppings cook. Next is a conveyor belt oven, it cooks at an even rate, but can tend to over-dry the crust if it's not thick enough. The worst is a belt-driven or rotating platter roaster. Sure it cooks a lot more pizzas than the others at once, but the temperatures in there are not very even. Second is the crust. Some places use pre-made, pre-cut crust, but only in some chain stores Other chains use a complete dry mix - they just add water. The best ones are made from scratch. Same thing goes for the sauce. The place I like to go to uses one canned ingredient - crushed San Marzano tomatoes - they add a touch of salt, EVOO, a sprig of fresh oregano, chopped with four or five smashed garlic cloves, with a quarter sprig's worth of finely chopped rosemary leaves for a breath of sweetness. Very delicious sauce. Most other places use stock tomato paste sauce or Roma tomatoes, not quite as flavorful. Domino's, as well as many cheap chain store pizzerias, overload their sauce with GMO "flavor enhancer" tomatoes with built-in MSG, quite a nasty experience. Go around your neighborhood, try out the places. Some places take more time to cook their pizzas. Remember, it's going to taste a lot better than Totino's, Tombstone, or even DiGiorno's, so it's not gonna be fast. Just have patience, or better yet, call in advance. |
