It started with "From the desk of Princess Celestia". |

The letter started "Dear Spike", the bit about Princess Celestia was likely just the header.
Also Twilight or Spike could just explain to Celestia what happened and ask her what was in the letter once they get back home. But noooo, it's too much fun to pretend they'll never know what was in the letter. |

Think it was just a regular letter like "how's things going? Could you bring that book next time you visit? I'm bored" |

Well, what we DO know is that Princess Celestia uses custom letterhead stationary.
