Image derp.

Applejack certainly seems like the type. She can hardly accept help, is ignorant of a historical figure that's mentioned in a yearly play, can't change farm procedure even slightly when it leaves the community without enuff, and can't deal with losing.

I take it that you mean Applejack is the Equestrian equivalent of the average, ignorant American, Nebbie?

Exactly. She's not extreme enuff to just be a stereotype, she's more like the real deal.

Well, I could argue most if not all the points in your first post, including the irony of you calling Applejack "ignorant" while you spell the word "enough" like "enuff", though most of that would just be conjecture on my part.

Ah, what the hell, I'd like to know exactly which historical figure you're talking about and when and where there's any evidence of Applejack acting ignorant of that historical figure.

^Oh, I see. I forgot that one because I assumed the figure Nebbie meant was the central focus rather than a passing hand-wave. Although, I guess it's still possible that Applejack could have known about Starswirl the Bearded, but just didn't know what he looked like. For example, I know that a person named John Wilkes Booth existed, but I don't know what he looked like.

Not to mention that Starswirl has been mentioned in all of 2 episodes out of 44 thus far.

Why is Applejack singled out for that? The only pony that actually recognized Twilight's costume was Luna, everyone else gave the same type of answer as Applejack did.

Not sure about the other points, since Applejack did accept help more often after Applebuck Season, particularly in Cider Squeezy, and The Last Roundup had less to do with losing and was more failing to get the prize money she promised. Not changing farm procedure, sure, but I don't really see the rest.
