Ingredients:

2 cups pitted, stemmed cherries
1 cup granulated sugar, plus extra for dusting
6 tablespoons corn syrup
1 teaspoon lemon juice
1/2 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 egg
3 flour tortillas (9 inch, and not the ones you find in the "mexican" food isle, get real ones)
powdered sugar for dusting
cornstarch (optional)
peanut oil (a lot)

Directions:

Pit and stem the cherries, add to a saucepan. Add the corn syrup, vanilla, and lemon juice to the pan, bring to a roiling boil over medium-high heat. Stir in the cup of sugar, mix until completely dissolved. Continue stirring as the mixture boils down, about 15 minutes. Remove from heat.

Heat peanut oil in another pan (at least 2 inches deep) or in adeep frier and allow to reach at least 350F (175C), no more than 380F (190C).

Meanwhile, let the cherry mixture cool and thicken. If it does not stick to the spoon, add a tablespoon of cornstarch at a time, mix well, and check the consistency again.

Beat an egg in a bowl. Brush around the outside edge of a tortilla with the egg mixture. Add a generous dollop (portioned so you can make 3) of the cherry mixture off-center on the tortilla, a bit inside the egg wash border. Turn the tortilla so the cherry filling is furthest away from you, then roll it tightly around the filling towards you. Halfway through fold the sides in, then keep rolling, pressing the egg-washed edges in snugly. Now you have a cherry burrito.

Lightly brush the top of the "cherry burrito" with more egg wash, then lightly dust with cinnamon and sugar. Press that folded edge down one more time, then flip it face down, and brush the other side with wash and dust with more cinnamon and sugar.

Carefully drop it in the hot oil. Cook it for just 2 minutes. (Check that the oil temperature stays above 350F (175C) and below 380F (190C), you may need to adjust the heat). If it floats and browns unevenly, flip it after a minute of cooking.

Remove and pat dry with paper towels to remove as much excess oil as possible.

Dust with confectioners sugar, and enjoy!

Sorry, meant to say, add the 1/2 teaspoon of cinnamon and 1/4 teaspoon of nutmeg when you add the sugar to the cherry mixture.

Also: Be careful about substituting a different oil for peanut oil. Corn oil is a good choice and will add an authentic Mexican flavor. Olive oil is not a good substitute and will burn!
