This fits with my head-canon about magic in Equestria. The entire land is saturated with magic, and one of the effects of it is that plants grow incredibly fast (or in the case of the desert we saw in "Over a Barrel", incredibly slow).
The Earth ponies don't encourage plant-growth, instead, they regulate it to a rate suitable for farming. If not for them, all of Equestria would resemble the Everfree Forest or the desert wastelands. |

^Dandyman - I meant that only Earth ponies know how to farm, because their magic is to make plants grow at their proper pace and in ways beneficial to ponykind. If a Pegasus or a Unicorn tried farming, their crops would be quickly overrun with weeds and jungle growth, or (if they're in the desert areas) die of drought.
I figure plant growth in Equestria is naturally chaotic, and it requires Earth pony magic to bring it under control so that food can be grown. |
