Apples have enough yeast to ferment on their own, though it's slow by itself. |

Well, different types of apples at different stages of ripeness give different results. Adding a little sugar helps the fermentation, and yeast produces better with a few specialized nutrients in the mix. Certain strains of yeast will produce different flavors or alcohol levels, too. If the cider is THAT good, I'd guess AJ's worked up a pretty sophisticated "recipe." |
